Forgot the sugar addition

Sat Nov 10, 2012 1:28 pm

I just finished my Belgian Specialty ale and when i was taking my OG i realized i forgot to add 1lbs of sugar to the kettle. I plan on pitching Brett L. to secondary. I figure i have 3 options. leave it alone OG 1.045, add sugar solution to the end of primary fermentation or add the sugar solution to secondary with the Brett. Any recommendations?

Another option (and from many accounts, I've heard is the best option), is to boil up your sugar solution and add it to primary when it gets just barely past high krausen. (Ie, the yeast are still going gangbusters but you can see a slight textural change in the krausen that is just noticeable enough to tell you that it's past peak.).

And you might even get a couple extra points of attenuation that way as the yeast won't clear out the sucrose first & leave some other sugars behind when they're starting to fall out.

I would recommend letting your beer finish out in primary. Then cold crash to drop out most of your primary yeast. Rack the beer to secondary on top of your boiled sugar addition and pitch your brett L. The brett will quickly wake up and feed on those sugars increasing the complexity faster than it normally would with the available sugars in secondary.
