I'm making a Pliny the Elder Clone (MoreBeer kit) and I ordered the white labs San Diego super yeast WLP090 for it instead of the recommended 001. Does anyone have any experience with the 090? Did I make a mistake? From what I understand, 090 is just a souped up version of 001. Any tips/comments would be appreciated.
This is my 3rd brew. Wish me luck. :aaron

Have not yet had the chance to work with this strain, but from what I have read it should be a fine replacement. Maybe even a bit cleaner too. Have no fear and go brew your beer!

Thanks for the vote of confidence in the 090. I'm waiting for the temp here to drop a little so I'm not fighting 95+ heat to keep this ferment cool.

I've used the WLP090 Super Yeast, I've had great results the three times I've used it. The fermentation with a starter is insanely fast, used in a IPA and it was off and running in no time. Some complaints I've read online has been that it's too clean for some tastes.

I used it several times with good results . A 1.050 wheat that was done in 3 days , a 1.070 red ale that finished in 7 and a 1.090 RIS that finished at 1.018 .
The yeast throws out a lot of diacytil after 3 days but cleans up just fine . I'd use it again

So, how long should I leave it in primary to clean up the diacityl? 2 days after active ferment ends? Again, I'm new to this. I read up as much as possible, but at some point I start to get overwhelmed with new info.

THANKS everybody for your feedback.

You can either take a more laid back approach (which is generally what I do) and let it stay in fermentor for a few days to a few weeks, but if you are in a hurry and are worried about diacetyl, you can do a test for it. Take a sample and split it between two glasses and cover them securely. One you will keep cool as a comparison, and the other you'll heat by placing it in a bowl of hot (~150) water. Take the glass out of the hot water once it's sat there for a while an cool it down to the temp of your other before opening and smelling. If the heated one smells like it's got dA in it, you'll want to give your yeast more time.

As primary fermentation slows down substanstially, you can raise the temps of your fermenter to 70-72F for 2-3 days. This will allow the yeast to reabsorb any diacetyl they might have produced during the fermentation. But as spidey said (and how this strain most likely works) you could just leave the beer in the fermenter for about 2 wks and you should be just fine - meaning it will clean up quickly after itself. The key is just not to rush the beer into packaging. A time frame of 2 weeks in primary is average and I usually let mine stay that long before packaging (kegging).

All times are UTC - 8 hours
