Forgot my starter!

Ok so i forgot to make a starter but I HAD to brew today. Making a robust porter. Brew day was good. I was planning on going to the homebrew store to get a couple extra packets of yeast in lieu of the starter. Brew day was done and I had yet to get to the store. Long story short I have a 1.070 SG wort and only one packet of 1056. I am also on duty tomorrow and am unable to get more yeast. My question. Should I make a starter and pitch it on thursday? or should I pitch my one packets and buy one or two more thursday and pitch them that day. I guess im worried about the beer being infected while just sitting.

My opinion only, but I'd pitch what you have and hope for the best. I wouldn't waste time or money on additional yeast or starters, because by the time they're ready, anything bad will have already happened. It's a robust porter, I'd say if you controll fermentation temps that you'll have a decent shot at a good beer.

I would recommend pitching all of your yeast at the same time unless you have a stuck fermentation or if you bottle conditioning with yeast. If you do pitch tonight and pitch more Thursday, you may need to add more yeast nutrient so your additional yeast aren't starved for nutrients. At $6 a vial/packet, I wouldn't waste money on extra yeast, a starter is usually the way to go. Save that money and buy ingredients for your next brew. You could end up spending $20-$25 on just one batch just for yeast.
