1 Servomyces Tablet in 5 Gallons = Fusels?

After adding a single servomyces tablet with 5 minutes left to boil in 3 batches and and no servo in 2 batches (two different yeast strains) I'm definitely noticing increased "burny" higher alcohol flavors from the beers that had a servo tablet included. All of these brews were all grain.


I know that, in theory higher levels of nitrogen can lead to higher fusel levels, but isn't this the correct dosage level for Servo? (I wouldn't expect that using the recommended dosage level should create this problem.)

Yes, it is the correct dosage. If you are getting fusels, there's another reason.

Do you have temperature control? What about oxygen? Both can affect production of higher alcohols.

I do have temp control ala an ATC 800+ and fermentation fridge and I aerate using an aeration stone that I often leave in for way too long. I'll take a look at aeration next time around.

High levels of O2 can definitely lead to fusel alcohol production. So can pitch temperature and yeast pitching rates. Be sure to pitch a couple degrees below your desired ferment temp and pitch an appropriate amount of yeast per style/OG.

How do you aerate? With pure oxygen from a tank or air pump?
