I agree that you should warm things up, as that should help too.


White Labs servomyces & Wyeast nutrient in boil (big batch and only had 1 Servomyces).

No nutrients since then.

Right on. Thanks. I'm hoping I did the yeast right by washing and pitching & dosing with candi sugar syrup after fermentation had kicked off for a few days.

I would say temp is your biggest problem here. I recently did a golden strong (1.075) and I pitched wlp500 at 63 and let it go as high as it wanted (living in Florida, that could get high). It only got to 75-77 so I was happy with that. The krausen dropped after 3 days, so I was worried about a high og, but I checked it after 2 weeks and was down to 1.009.

So I would say, if it still has it krausen, warm it up to the mid 70s and leave it there for a couple more weeks. It should finish out for you.

Are you sure your mash thermometer is accurate? When was the last time you properly calibrated it correctly?

Very legit question and on my to-do list for this weekend. I have been able to ferment pretty-much everything I brew to within a point or two of what I expect except big OG beers. I'll calibrate this weekend. Thanks.

1 carboy is 1.016 the other is 1.020. I am going to rack tomorrow and pitch 0.5L of active WLP530 into each and keep my fingers crossed.
