Do you have any chance of getting hold of any of Russian River's sour beers like Consecration, Supplication, etc? If so, I would simply pitch those dregs as they have all the wild ones you will need. There is more than one strain of brett in Consecration so picking one to use could be tough. I would recommend WY Brett B and WY Brett L. if I had to choose individually. How are you souring the beer? Do you have lacto or pedio to pitch?

I figured it out... Using the roselare blend after primary is done.

Roselare as good as it is can be somewhat tame in my opinion. You might want to consider pitching dregs from one or two commercial sour beers that you enjoy the flavor profile of. This can help speed up the acidity and funk production by augmenting the Roselare as well as boost the complexity of the overall product.
