How many Yeast can you use in one bacth at the same time?

I am looking to make a Belgian inspired Russian Imperial Stout, I came acroos to what i think its a good and complex recipe, although it sounds very complex :0 . It calls for 3 different yeasts which i think its overkill, is it possible to combine 2 yeasts in one starter? or do different starters for each and then pitch? or just drop the idea and use just a high gravity yeast?

Am I missing something because I don't see 3 yeasts listed in that recipe. I see:


White Labs Trappist Ale (WLP500) info
ale yeast in liquid form with low to medium flocculation and 78% attenuation

That said, I do not believe mixing multiple yeasts at one time is a good idea. Too much contention.
The only way I've seen it done is one at a time a few days apart.

Ha he just edited it a few days ago. Being from a kitchen background I was reading the list of posible yeasts as mandatory for the recipe.

I went with wyeast Trappist hg

Just curious. Did you find a lot of sulfer comming off that during fermentation? I just used 3787 and noticed a lot more than I remembered the last time I used it. What did you find?

I have only used once on a Belgian Golden strong and it had a littl ebit of hot alcohol in it, I am making a new starter with it atm.
