Update-
Pitched last night. This morning, nothing happening in either carboy. They're usually going strong at this point. I picked up a couple new vials this morning, racked out 500 mils of wort into flasks and threw them on a stir plate. I just checked the carboys, the 001 finally got going on its own, thin yeast layer on the top. 002, still nothing. I added oxygen to the carboy and pitched the 002.
The 001 was going, but I knew the yeast couldn't be 100% since it took them so long to start in a 1.045 wort. I didn't want to totally overpitch, so I threw in half the starter.
We'll see what happens.
Lesson-if you cook your starters....start over.
