Re: only my second starter

Yesterday afternoon I had some bubbling every 25-30 secs which gradually increased to about once every 9-10 secs this morning. The bucket was out of the cold water bath and on the cold cement floor. Bucket temp was readying 65 yesterday, but 67 this morning (due to the activity inside I assume) so I placed it back in the tub/water. can add ice bottles tonight if temp continues to rise. Want to keep it around 65-66 for the first several days, then I'll move it to allow it to rise up to 70-72 to finish out. Dry hopping will probably happen after about a week in the bucket, depending on what i get for gravity readings.

Found some krausen in the blowoff tube last night with it burping every 6sec or so. This will be the highest gravity brew so far for me (1.060, so nothing huge) and the first time using 1098 yeast. Really hoping for a good result, and the ferment ses good so far, maintaining temp (67 during this heavy activity) in theorems of summer with nothing but a tub of about 2-3 gal of water). Hoping to dry hop after about 1week...

dry hop now, or wait until krausen falls?

Still burping here and there, still a large foamy krausen filling the open space above the beer. Took a gravity reading and it's down to 1.018 (og was 1.060). Looks like the Wyeast 1098 is working nicely!

Thinking I might dry hop soon. But... should I wait until the krausen has fallen?
