What brand of Pressure cooker are you using? I found some by Presto and All American but of course in the reviews nobody talked about creating sterile water or wort. I get the impression you sometimes use the Cynmar nalgene bottles and sometimes the glass mason jars. Is this correct? If yes, do you use them for different tasks?

Presto and All American are the two top brands of pressure cookers. Either will work fine I use a big Presto for canning wort. in fact I plan to do it again tomorrow. Mine will hold 7 quart jars at once. Even so, it does take 3 batches, and a lot of time, to can 5 gallons of wort. I cook it for 25 minutes between 15# and 20#.

I gotta tell you, I love the idea of canning wort and autoclaving in general, but I have never done anything remotely like it.

Who is going to shoot the how-to video for us city-folk???

I don't have video equipment, but how about if I shoot a bunch of pictures when I do it next?

I use the All American, because it is uh... All American. :D

It is a nice, solid cooker made out of thick aluminum. They're more expensive, but something like that will last a couple lifetimes.

Yes, I cook the poly bottles and glass mason jars. The poly bottles are empty. I use them later for harvesting yeast or sometimes for starters. The glass mason jars hold either water or starter wort.

Can I assume you use the 21.5 quart unit that MoreBeer sells? I am condsidering that unit which does 19 pint/7 qt or the 30 quart unit that does 19 pint/14 qt . Any recommendations? Do you need at lot of btus to get maintain 15 psi?

Even the largest size doesn't require a lot of heat. I use my kitchen stove and the burner is turned way down low.
