Thanks for the warm welcome. As for my background, I'm a chef by trade and have always been surrounded by good beer. Three years or so ago it hit me after reading the joy of homebrewing by Mr Papazian that making beer isn't really that different from cooking: Technique, recipe formulation, tasting...I was in love from the first batch and I've been doing it ever since (all grain from the start) I was lucky enough for a new micro to open up in my home town not too long ago, and after bugging them over and over, the owner finally let me come in once a week and assist the brewer which has been a great learning experience so far. I am also thinking about taking the online concise course from siebel. Has anyone been through this course? Is it worth the price tag? I've heard mixed reviews

Hey Taylor- Welcome.

What new brewery opened up in Knoxville? My parents still live there ( I grew up in Clinton). The only ones I knew of were Smoky Mtn, Downtown Grille and Saw Works. Would be cool to check a new one out.
