Choosing a House Yeast

Fri Apr 29, 2011 4:51 pm

I am thinking of making the change to liquid yeast (have been using dry yeast so far) and will be washing and reusing this yeast. I am looking to pick out one yeast strain to become my 'house yeast'.

My favourite styles are Pale Ales, ESB's, Brown Ales, and Fruit Wheat beers. I like to ferment colder 65ish to get a cleaner taste, and was thinking of going with White Labs - California Ale - WLP001. I was just wondering, would this yeast strain work with a Raspberry Wheat beer?

That yeast would pair very well with a nice raspberry wheat.

Cal Ale is probably the most versatile yeast strain out there. I use it for most of my brews. If I want a sweeter less dry brew I use London ESB.

For all of the styles you list bar Fruit Wheat I like WLP007 Dry English Ale.

You could also try a kolsch yeast for a clean flavour profile.
