Thanks guys, I already have a vial of 300, so i'll use that, but ferment low. While Im chasing that banana flavour, too much could become old very quickly.

Silo_Ted, if you're still here, let us know the results of that hefe, would ya?

I just brewed an all extract hefe, using WLP300 (made a starter) and went with the low temp (63°). It started off slow (judging only from the bubbles out of the blow-off tube) picked up gently, and the slowed significantly after a couple days. Not sure if this is typical for the WLP300 at this low a temp or not. Haven't taken a gravity reading yet, but might do that tonight to see where things are at.

• drinking: JBA batch #2
• bottle conditioning: Best Bitter
• recent past: (AG) Rye IPA rebrew; rye saison; BCS Cal Common, Rye IPA, Tasty APA, JZ's Cowboy Altbier

A buddy of mine brews a mean hefe and swears by this process for best balance of clove and banana-

Small pint-quart starter pitched at high krausen

ferylic acid rest-

don't aerate wort-

ferment 62 deg F -

So basically stress the yeast a bit and they will work it out themselves. YMMV. PS - have fermcap handy! :lol:

Fermcap has to be added to the boil, right?


It can be added ANY time through boiling up yeast starters, in the starter flask during fermentation, during batch boiling to prevent boilovers, or during primary fermentation to keep things from getting out of control.

Ah.. didn't realize it can in to the fermenter directly
