Don't you hate it when you fuck up a brew session and end up with one of the best beers you ever brewed knowing you will never be able to replicate the process? I was trying to brew my rye cream ale recipe for about the 10th time (you would think it would be almost automatic by now) but all sorts of things went wrong beginning with figuring out hop age degradation wrong, having to substitute different hops and having problems with the burner (including running out of propane midboil). Doesn't taste at all like it is supposed to. But it does taste even better. Too bad I will never be able to brew it again exactly the same, but I will try to come close.

I hear you. The best beer I have yet to make was made better by too high of an evaporation rate - was left with 3.5 gallons of beer. Was a great big beautiful beer based on JZ's red rocket clone. I miss that one. I was learning the new system and the 210K BTU burner, when this happened.

Wayne would you believe that my last brew session (Sunday past) I also ran out of gas in not 1 but 4 gass bottles managing a grand total of a 41 minute boil on the Pale 31 recipe (all the gas bottles on the farm are now empty). But wait theres more I had what I thought was a stuck mash but it turnned out to be a spider nest in some tubing from the false bottom in my mash tun.

Wort tasted good, pitched the yeast and then a mini heat wave hit meaning it is fermenting at 24 degC.

My chances of repeating this beer if I like it are pretty fucking thin

Still trying to figure that out, huh? I was listening to a session episode from like 2006 last week where you sent that in. Hah. They enjoyed it from what I remember.

I just did my third try of that one. WAY different. Too many things have changed with my brewing system (and or recipe/ferm profile) since the first batch that I fell in love with. Unfortunately this different one is not swinging towards the "better" side. The most notible difference for me has been the yeast character. Not only have I tried dry yeast (US-05) for the last two batches, but I've also fermented colder (63?). They are good, clean beers, but a lot less interesting.

For the first attempt I think I was up to around 70, using 001, and it was awesome. There was enhanced fruity esters (ever so slight banana-like quality - probably from the rye). Next trial, I'm going back to a slightly higher IBU level - maybe high 20's, ferment a little warmer with 001.

HATE IT....

I keep a pretty tight brewing log, but......

Recently, I took a bunch of 1/2 pound bags of adjunt grains, wheat, rye, flaked barley, etch, about 4#'s of 2 row, and scraped my LME bucket, and some unlabled hop dust bits. Hell I even used 3 old dry yeast packets from the drawer. I was really cleaning house.

It turned out to be 8 gallons of the best Porter I have ever tasted.

EVER....

And all of my friends and family want more....

I guess I now have a "White Whale" to hunt now.... "Only it's Black!!!" :roll:
