No signs of fermentation. . .

Fri Jun 25, 2010 9:37 am

Made a Russian River Blind Pig clone on Wednesday.
Pitched yeast last night. I was feeling lazy so instead of making a starter, I just used two vials of yeast. Usually by morning there are at least signs of fermentation going on. Little yeast colonies on the surface, some bubbling from the blow off. But as of now, nothing.
Pitched at 65 degrees, OG 1.072, 5.5 gallons wort, two vials of WLP 001.
Should I be patient or run out and buy some more yeast?
I do have a packet of dry yeast in the fridge for emergencies but I'd hate to use it on this beer.

Without a starter you should have pitched at least 3 vials for a 1.072 beer. I'm sure it will start eventually, but I wouldn't expect the best fermentation.

If you use another vial I'd make small starter to get it going.

Just give it more time. If you don't see anything after 72 hours, then maybe consider your yeast. How old were the vials? How were they stored? Two should be enough. Under pitching a bit, but not by a lot.
