Re: Saison Attenuation

I mashed at 148 and used some sugar as well. I used 1 vial of WLP 568 in a 2 L starter for 10 gallons - so I under pitched! I also did not raise the fermentation temps up fast enough. I'll try a saison again someday...
On Tap: Telemark Stout
On Tap: Top of the World Cider
On Tap: Lower Corner IPA
On Tap: Bodacious Brown Ale
On Tap: Maple Double IPA
Fermenting: The Session Pale Ale

I love this strain. It doesn't require any of the temperature manipulation other strains need to get down to a nice low gravity. I made a Petit Saison with this, and in less than two weeks it dropped from 1.044 to 1.002 at 68°F. It doesn't have all of the spicy flavours that are so wonderful in a Saison, but very very small spice additions can make up for that. I have chosen not to add anything and just enjoy my bone-dry Saison.
