Wheat wine is basically the same as a barleywine, just with a different grain. There is a good discussion of it as well as a couple recipes over on the MoreBeer forum. http://forums.moreflavor.com/viewtopic.php?f=2&t=31333

My favorite commercial example is New Holland Brewing Company, Pilgrim's Dole - Wheat Wine.

I've had the Smuttynose Wheat Wine, and Weyerbacher's XII Rye Wine. The Wheat Wine was pretty good, very similar to an English Barleywine. The Rye Wine was spicy and citrusy, but WAY too sweet.

I posted our recipe for a Wheatwine in the thread that Bugeater posted. We have made that recipe 4 times since 2000. We like to keep it more like a wheat version of a Barleywine. It is interesting that the Maltose Falcons in their style guide define a Wheatwine as having Noble Hop character. I hope that they would be open to other hop profiles other than noble. We have found that the best yeasts to use are the American Ale (1056, 001, US05) and the WLP007 dry English Ale.

There is a local pro brewer here, Jamie Floyd, who while employed at the Steelhead brewed a Wheatwine. His recipe is quite similar to mine. Every now and then a keg of this appears even though it has been several years after he brewed it and it is quite a treat to have some.

Our club, the Cascade Brewers Society, will be hosting a shift at the Hospitality Suite at the NCH in June. We can bring some bottles of the Wheatwine for the BN to try. It won't be listed, but if you ask for the Wheatwine, we'll pour you some.
