This one is going to be interesting, for sure. There are only a handful of participants with BJCP experience. Additionally, we have chosen a beer that does not conform to a particular style - so there will be even more variability in the results.

This beer is intended to be malt forward with significant mouthfeel. With my system and process, a 154F sac rest, a 90 minute boil, and WLP001 gets me about 68-72% attenuation (or 1.018-1.020 FG in this case.) My last batch, which I'm pouring now, finished at 1.022 and you'd swear it tastes like 1.012. Big mouthfeel, hoppy flavor, dry finish. It would be a totally different beer mashed at 151F.

1.017 is perfectly okay with this beer and its 63 IBUs as long as the remaining gravity is due to non-fermentable sugars.

OG/ABV discrepancy

Hi Guys,

Funny you all chose this recipe, as I've been wanting to brew this, all ready to go, but I have an issue.

I typed this recipe (extract) in Beersmith exactly as written in BCS on page 143, which lists this as 1.066 OG/6.6%ABV. But Beersmith reports 1.059/5.45%ABV. WTF? BTW, I am using 7 gallon boil and 6 gallon batch, which is what Palmer says BCS recipes are geared for. I even e-mailed Palmer about this recipe discrepancy, but haven't heard back yet. I think it must be a typo or I am going crazy.

Any ideas? :?:

I get the same thing. If you change it to a 5 gallon batch, the OG goes to 1.069.
I suspect that some of the potential gravities in BeerSmith might be wrong.

Maybe you have your efficiency set lower than the 70% that is the "given efficiency" in the book. Just tweak the grains until the percentages match (or get real close), then tweak the hops until you get the intended IBUs.

It's an extract recipe, so efficiency shouldn't come into play. Efficiency is actually grayed out in Beersmith when doing extract recipes.

I'm just going to jigger the extract percentages to be more in line with McD's recipe on page 4.

I should just make it all-grain for all this trouble, but I have extract to use. :roll:
