Pyramid Amber Weizen Clone?

Another beer I picked up at the grocery store that I love. Wheat beers are usually too bland for my tastes. I like this one and the extra body and flavor from the amber component.

According to the website here are the specs:

OG: 1.051
Alc: 5.1%
Grains: 2-Row Barley, Malted Wheat, Caramel
Hops: Nugget

So based on that, here is what I came up with...

Thirsty Mallard's Pyramid Amber Weizen Clone (Attempt 1)
5.5 Gallons, 60 Min Boil
Est OG - 1.050
Est IBU - 11.4

Grains:
4.5 Lbs - German Wheat Malt
4.25 Lbs. - Domestic 2-Row
2.0 Lbs - Crystal 60L

Hops:
0.25oz. - Nugget - Pellet - 13%AA - 60 Min.

Yeast:
Wyest 3333, German Wheat


I wasn't sure about the yeast... I will have to re-listen to the show with the Pyramid guys to see what they said about their yeast. I also wasn't sure about the crystal malt or the IBUs. Any input would be very helpful!

Thirsty-

I like this beer too. It's one of those 'go to' beers that I pick up every now and again just because it's a nice mild thirst quencher with a bit of taste behind it.

The WLP320 is the right yeast (it is the "bad" American Hefe yeast that everybody seems to hate). I've made several beers with it that come out similar to the Widmer/Pyramid low level clove/banana phenolics. This yeast makes AMERICAN WHEATS, not GERMAN HEFEWEIZEN's, and is advertised as such.

The Pyramid web site specifies 3 types of caramel malt.

I'd cut the crystal down to about a lb total -- 1/3 lb each of crystal 10, crystal 80, and Caramunich II. I think 2 lbs of C60 will be cloying and too much.

THIS IS NOT A WEIZEN but an American wheat.... that being said some people seem to like it

As Bub mentioned it's an American Wheat. If I'd brew this beer I'd use a Kolsch yeast like Wyeast 2565 or White Labs WLP-029. For whatever reason, these yeasts seem to create a better wheat beer (at least for me :D )
