Uerige Doppelsticke

Wed Apr 11, 2012 10:40 am

I absolutely love this beer! I have been wanting to brew a doppelsticke for a long time. I am finally getting around to it. Lots of recipes and info on North German and Dusseldorf alt, even a little on sticke. But, little if any on doppelsticke. I am wondering if anyone can help?

Here is what I have for a recipe thus far:

10 gallon batch
Mash 150F w/ possible Hochurz Decoction
OG: 1.088

64.5% Pils
32.2% Munich
2.8% Carmunich III 60L
0.4% Carafa III

45 IBUs at 60 min Magnum
5 IBUs of Vangaard at 30 min
4 oz of Vangaard at Flameout/20 minute WP

WYeast 1007
Ferment 56F

Thoughts? Considering going 65:30:4:1 on the grain percentages because I like nice even numbers :D

I never had the beer, but looking at a couple of the reviews on beer advocate it's described as a cross between a dopplebock and an eisbock. That said you might consider upping the caramunich to around 10%.

60% Pils
30% Munich
9% Carmunich III 60L
1% Carafa III
