no flavor additions in Pliny?

How does Pliny get so much hop flavor but it doesnt use any "flavor" hop additions?

35+ minutes bittering additions
10-30minute flavor additions
0-10 minutes aroma additions

Pliny uses a 90minute addition, 45, 30, 0 and dryhop

Short answer? Because it worked.

As to his actual thinking, I can't say. I can say that you don't get the same flavor from the same hops at all times, so maybe he liked the character of his 30 minute additions better.

Does anyone know if Vinnie whirlpools his 0-minute hops listed in the Pliny recipe? This would provide a good amount of flavor, considering this addition is fairly large. Even if he doesn't whirlpool, I imagine they sit in hot wort for a while since it takes time to cool the wort.

I would imagine that they do a whirlpool as most american breweries are set up for it. I've seen breweries that centrifuge to remove break and hops (in belgium actually) but the whirlpool is pretty standard and takes a considerable amount of time to complete as you have to pump the whole wort in and then let it rest til your cone forms, then still have to pump the whole thing through your chiller. I think most homebrewers get their work cooled a lot faster than commercial breweries do.

Flavor is the combination of two things. The sensation of taste on your tongue (bitter, salty, sweet, sour and/or umami) and the olfactory sensation of volatile aromatic compounds.

So the flavor of hops is a combination of bitterness and the aroma of hops. There are absolutely no compounds which are anything other than bitter or aromatic that contribute to hop flavor.

Flavor as a unique thing is a myth, there is only bitterness and aroma.
