just a thought

I inherited a whole lot of fresh apricots recently, and would like to get some thoughts on using them in a cream stout. I have had an apricot hefe and didn't really enjoy it all that much. Not a big fan of hefe's anyway. So I thought apricot's, being so close to peach flavor, may be good in a peaches and cream type stout with lactose. Any thoughts?

I would make an apricot pie and buy some peach extract for the beer. :)

I definitely wouldn't listen to this guy, what does he know about extract?!

...and yeah, I would save the apricots for either a lighter beer or a pie. I would think that the apricot's will get lost in all that roast. A peach-milk stout sounds interesting though...

Tasty: I wanted to add a thanks for the Janet's Brown recipe. A friend of mine asked when I was going to brew that great beer again. My answer - very soon. :aaron
Kegged: American Brown
Fermenter: Wheat APA, feelings
