Pineapple beer?

So my brother in law just asked me if I could make him a pineapple beer. when I asked him what exactly he wanted he said he doesn't want anything bitter... he wants something like that fruit beer I got from out of state (new glarus cherry beer) but with pineapple.

I don't have much experience with fruit beers... and none at all with brewing with pineapple. Anyone have any advice on a recipe? I'd be ok with any type of beer really.

If you don't want to try and add fruit or extract. You could try and experiment with your yeast, manipulating it to produce more fruity esters, and combining it with fruity hops that can give a pineapple taste/aroma (some people say simcoe would do that). Tell your friend you brewed it with pineapple and see what he says.


Ethyl Hexanoate, and Ethyl Butyrate produces a fruity apple aroma...If you're interested, look at white lab's website, under their miniferment data. It lists the amount of ehtyl acetate given off with different yeast strains, which gives a boiled sweets, fruity aroma. Or just choose a strain that describes itself as fruity!

100% Brett Clausenii and a little acidulated malt, and about three to six months.

I believe JZ made a horrible pineapple beer once.
