So, after listening to the lagering episode a couple months ago, the BIGGEST take away I have from it is that filtering reduces aging time.
I have a British IPA that is 3 weeks in the fermenter today and I want to serve it in 2 weeks. I like the "chewiness" of the british beers and don't want to lose it through filtering but I want to "fake age" it, at the same time.
What do you think?
