Hi,

I'm working on a saison recipie, and I wanted to add black peppercorns as a spice at flameout, I was wondering if anyone has any insight at how much to add.

Thanks,

Is that pre-ground, freshly ground, whole or cracked?

I use freshly cracked. Normally I put them in a plastic zip top bag lay them flat on the counter, and use a cast Iron skillet to press down on them till they crack.

Lately I've been using a small grinder to grind my spices just a pulse or two.

That's coarsely crushed, or cracked.
