Critique my IIPA recipe

I want to make a Hop Grenade this time. Something strong and extremely hoppy but not overly malty and heavy. I deliberately dropped the Crystal 120 down to 80 because of personal taste.

I'm brewing this batch Sunday so I'm curious to get some feedback before I buy the materials.

First pass recipe:

5.50 Calculated at 80 IBU which I know is way high.

I am going to mash @ 150-152 and dump a huge starter into the fermenter. I am considering combining WLP001 Cali Ale and WLP013 London Ale Yeast. I'd like to get this down to a FG of 1.015 or lower. The London Yeast poops out a bit early but I love the flavor. Hopefully the Cali Yeast will get it the rest of the way. I'll probably dry hop with 20% Simcoe and 80% Crystal, we'll see how much I can get into the carboy.

if your brewing to style I would maybe drop the pale choc and victory, unless you want a biscuity/nutty malt character.
might recommend a lower mash temp too, even with the cane sugar, That said if you want a fuller bodied DIPA more along the lines of hop stoopid or homo erectus etc. your right in line.
one more thing to think about. im pretty sure your getting the same water I am, which means it needs some adjustment to get some good bitterness from, maybe think about adjusting that with gypsum and or other salts. Ive had good luck aiming for 120-150 calculated IBU's in my DIPAS.

Hey P-Town homie. Thanks for the feedback.

I think I'll take another pass at the recipe. I don't want to drop the Victory and Chocolate all together but I think I'll lighten it up a bit.

I really need to get my water tested. I am on a well and I use the water unfiltered on purpose. If I leave a dish of water out to dry there is quite a bit of white mineral residue left behind. I have to use filtered water in my coffee pot or the heating element gets caked with minerals and plugs up. Even with a basic filter I have to use CLR once in a while to keep the coffee pot working.

I guess I am getting to a level in my brewing where I need to know what is in my water.

Homo Erectus??? too funny.. I have not seen that beer. I'm not shooting for a Hop Stupid but I do like that beer.

homo erectus is a great fuller bodied DIPA from walking man brewery, i figured they would have it down the road in corvallis as well.
