when should i pich the dregs?

gonna be making my golden strong and decided to ad the dregs from a bottle of jolly pumkin. so when would you guys ad it?.. in a secondary or at bottling? i was thinking if i do it in a secondary i could ad some simple sugers to feed the bug so it would get extra funky. wich i guess raises another question. what is the alcohol tolerance of all these randon bug? any help would be nice.. thanks guys

I would certainly do it in a secondary for the start of it, especially if you are going to add any sugar. Those bugs can eat sugars that are unfermentable to your yeast strain. Couple this with the sugar addition, if you put them right in the bottle, you might get more CO2 production that you had anticipated. Best case, you have over carbonated beer. Worst case, you have exploding bottles.

I would definitely put them in a secondary fermentation for all the reasons above.
Too much of a good thing....is a very good thing!

If your intention is real funkiness, I would mash a little higher (or add some maltodextrin) to leave some more complex sugars for the bugs to work on. If you plan on adding some simple sugars at the same time as the bugs, the regular yeast might handle those before the bugs get to work on them.

secondary it is. next.. my golden strong is already 8-1/2 % abv. is that gonna be to much for the bugs? i don't see to many big fucky beers.
