Southern Tier Choklat is Amazing

Hey So I'm thinkin about trying to work together a recipe to clone the Choklat Imperial Chocolate Stout by Southern Tier.

Their bottle label, and the website give a pretty generous description of the ingredients, but there are a few things I'm not totally sure about, and I'm wondering if anyone has any thoughts.

First, what kind of IBUs would a beer like this have, what sort of bitterness to gravity ratio I guess?

Second, I remember the chocolate flavor being unlike anything I'd had before, and I've tried plenty of beers in which there was lots of chocolate malt, with none of them being like this. I imagine then that they get lots of that quality from the bittersweet belgian chocolate they use. Anyone with an idea of how much of a given chocolate is appropriate for a five gallon batch?

It's a big beer abv of 11% so I was thinkin yeast-wise that california would probably be one of the heartiest and most likely to get me there, but then again it does kinda accentuate the hops, I wonder if something else might not mask them but kinda not play them up so much.

Of course, if anyone's actually done this beer successfully, any kind of ideas you used in your recipe would be totally appreciated.

Hey Brad, I will soon be getting a recipe for a chocolate porter that is supposed to be quite similar to 21A's that they did for Strong Beer Month. When I get it, do you want me to PM you with the chocolate amounts? I think it was all added in the secondary.

I'm with Bah, in fact I just got off the phone with my Bro-in-law and we were talking about how to brew a beer like ST Choklat, so any info is appreciated!

Yeah that sounds good, I suppose that might help me on my way to know the general sort of chocolate amounts. I remember that beer at 21A from strong beer month. it was pretty good, but not totally as chocolate-y as the southern tier beer.

I can't say that I've had the Southern Tier, but I remember thinking that the 21A porter was like drinking liquid chocolate. I can't even imagine more chocolately deliciousness crammed into a bottle

I am getting 2 oz of chocolate nibs that I will grind up and toss in the secondary. I can put up the promash recipe when I get it if you want.

We just got their IPA a few months ago. $16 per 6 pack though :( still good stuff
