Tasty, did you ever try this with just the NS in the finish? I'm considering brewing this next and I'm thinking of following your recipe exactly (including your 2 week lager fermentation regimen) except replacing the Hallertauer Hopback addition (since I don't have a hopback) with a 2oz. 0 minute addition of NS (l have a bunch of this hop on hand). Wondering if you've tried it and what your thoughts were?

I did try it and the Nelson took over the beer hiding the natural wine type esters from the bock yeast . If I had to do it again, I'd do what you're planning, just use it as a flameout addition.
