L-O-N-G Aged Beer Rec'

Well, I am now able to brew one more batch before I deploy overseas for 6-months in Dec. Any recommendations on a style to let age for 6+ months?

I am thinking either Belgian Strong (Golden or Dark) or a Lambic (first of my 3 to then plan to blend in 3-years or so.)

Thoughts?

Plan II...going to rebrew my RIS and age it. Thinking of putting it in secondary or a keg after 3-4 weeks and aging for 6-months in my basement to then crash and carbonate when I get back.

If it's going to sit unattended for six months I would probably keg it and let it set at cellar temps. I would worry that the airlock in your secondary would dry up and if you are storing it cold, the yeast really can't get much accomplished.

Thnx..good call. Thinking just set my chest freezer to around 50 deg F and let it ride....maybe with a bleed valve or something attached.

I'd make a Belgian Strong Dark Ale. But that's just me.

Belgian Dark Strong was #2 on the list.

Next question, thoughts on Warrior, NB and Cascades as hops in a RIS. Have the hops on hand and thinking about the hopping schedule from a BYO Flying Dog Imperial Porter Clone...
