Hay there,

I am at work and dont have my book, can any one post the Belgian Dubbel recipy for me? Im thinking of using it for my winter warmer....

My dubbel from BCS has just about finished...book says to bottle to 3 or 4 volumes and lager for a month.

Do I;

Bottle, then lager (I have concerns about it carbonating at this temp. 7-10C/45-50F) Do I then need to let it sit longer after this to carb up?
lager for a month, then bottle?

Who's done this? what worked for you?

bottle conditioning will take longer at that temp, but given that much time, it should carbonate to the appropriate level. If it doesn't in that time, either give it more time or allow it to warm up a bit after the end of the month.

You could lager it in a carboy if you want, but be sure to rack it off the yeast cake for extended lagering and make sure the carboy is filled to the top to prevent oxidation. If there's not enough beer to top it off, just bottle it because the bottle is a more o2-free environment.

I've just let mine sit in the keg at 25psi for the past month (at 42F). It's just about ready to bottle now, which is cool since I'm dropping it off at my LHBS on Monday to enter in my first competition.
