Jamil's Wit Recipe Questions

My wife is a big fan of Blue Moon, so I'm going to brew a Wit for her (gotta keep 'em happy!). For those of you familiar with Jamil's Wit recipe (see below), what tweaks would make it a little more "Blue Moonish"?


5.50 pounds Pilsner malt
5.00 pounds flaked wheat
1.13 pounds flaked oats
0.25 pounds Munich malt

Hallertauer @ 60 minutes for 19.7 IBU

1.5 ounces fresh orange peel @ 5 minutes
0.4 ounces crushed coriander @ 5 minutes
0.03 ounces chamomile flowers @ 5 minutes

My inclination would be to drop the Munich and chamomile (I don't think Blue Moon has either of these). I haven't brewed a Wit before, so I don't have any real sense for the intensity of the coriander and orange peel.

Any suggestions would be appreciated.

Just kind of wingin it here, but the recipe's probably alright. Maybe up the coriander a bit to give it a little more candy orange flavor. The biggest thing I would do to try and replicate Blue Moon is to just use an American Wheat yeast instead of a wit yeast. Blue Moon just doesn't have those phenolics that will come from the wit yeast. You could always try a kolsch yeast too. I bet you if you brewed the recipe as is she would probably enjoy that as well.

Thanks for the suggestions......I just harvested some of the Wyeast 2575 (Koelsch II) from a previous batch, so that would be ready to go.

i've made JZ's wit a couple of times, it's great. don't change a thing. if the SWMBO has tried Hoeggarrden and likes it, you're golden. Later, Drew
