Ouch. What size batches will you be brewing to cover 300 people? Or multiple 5 gal. batches of each? Even if only half drink beer, you'll need more than 3 batches if anyone wants more than one. Mazel tov on the wedding btw.

Hefeweizen is the EASIEST beer in the world.
5 gallons:

6 lbs Wheat DME if extract or 5 lbs pilsner malt and 5 lbs white wheat malt if AG
1 oz Hallertaur @60
Wyeast 3068
Carbonate to 3 volumes by using 7/8 cup corn sugar instead of the normal 3/4

Tried and true and ready to bottle in 10-12 days.

Or, boost it to 10 gallons and split the wort into 2 separate 5 gallon batches --
The exact same wort can be used in an American Wheat just by using a yeast like Wyeast 1010

Belgian Blonde is always a hit at my house and the yeast have been cooperative:

7lb Dingeman's Pilsen
2lb 2-row
1lb Candi sugar
0.75oz Perle 60'
0.50oz Saaz 15'
1.00oz Saaz 5'
WLP530... pitch cool free rise.

I use this as a starter for Quads and Tripels but everyone always likes this more.

Sierra Nevada Pale Ale Clone is alway good for most when I brew it. You can cut back the flame out hops a bit for some of the few people that find them offensive


All Grain Recipe - Sierra Nevada Pale Ale Clone ::: 1.052/1.012 (5.5 Gal)
Grain Bill (70% Efficiency assumed)

10 lbs. - 2 Row Pale Malt
1.25 lbs. - Crystal Malt (60L)
Hop Schedule (33 IBU)

1/3 oz. - Magnum - 60 min.
1/2 oz. - Perle - 30 min.
1 oz. - Cascade - 10 min.
2 oz. - Cascade - at flameout

Yeast

White Labs California Ale Yeast (WLP001) - 1800 ml starter

Mash/Sparge/Boil

Mash at 153° for 60 min.
Sparge as usual
Cool and ferment at 65° to 68°

Are you at least bottling from the kegs? If you can convince the future Mrs., my suggestion would be to get custom printed pint glasses, then you can keg it all and give the guests something to take home rather than going through all the work to custom label bottles that no one's really going to keep anyway.

Man spider, are you some interior decorator or something? That is a great idea! In fact, the coolest gift I got at my wedding was a set of 6 pint glasses with my "brewery" name printed on them and a pitcher as well. It was very unique and I still use the glasses all the time for parties.

Thanks, you guys are awesome. Anyone have a tasty (and EASY), tried and true stout recipe? I'm only set up for 5 gal batches but have access to plenty of fermenters. I'm thinking about doing 2 batches ( 10 gal ) of three varieties (30 gal total). Anything more than that will be store bought.

Just do a search for Jamil's dry stout. Use the dark (English, 500-600 SRM) roasted barley and pulverize it in a coffee grinder. You won't get the black color if you don't pulverize it and use the dark barley.
