The one thing I get from this beer is a definite caramelized flavor. >> try doing a longer boil, maybe 2 hours,t.

Yep its a 2hr boil with sugar at the start if you want the caramelized /candy flavor, or a 90 min boil with sugar at flameout to get a really pale beer.

I like Caracole yeast the best but its hard to keep a steady supply on hand so wlp550 is my next pick.

Not to sound like a jerk but maybe you should study Belgian beers more as this beer recipe is really,really close to the real Saxo. This recipe SG is roughly 10-12 points higher than the real Saxo->(SG 1.065 BLAM page 112)

Good grief, I didn't know Saxo was a hard to find beer.... I'm in Fla a true beer wasteland and its on the supermarket shelf.

i definitely have to give a +1 to the long boil. I have ( unsuccessfully) tried to clone Nostradamus a few times yet have gotten the closest using a longer boil. the caracole yeast is great, I wish a yeast lab carried it
