I would try frozen ripe bananas in the secondary. I assume you will get a pretty significant fermentation out of them, lots of sugar. I assume moderate hops, but enough to balance the sweetness, probably a floral variety? I had a sour banana beer years ago that was really pretty nice. Some toasted, biscuit character would balance the bananas.

I have not had the beer you are sourcing. What is its strength and character?

It's an english style ale, I would say in the upper end of the english brown mild category. Lots of malt character with some banana aroma and flavor. Finishes pretty dry for an english beer, but not really any hop flavor present.

That makes sense for a base style, something to work with the bananas and add the toast/bread character. So why not simply use a simple English Brown recipe (lots available, take your pick!) and secondary the bananas. Maybe divide the batch and try a couple different amounts of bananas. I am not sure how much you would want. I would guess they are pretty strong in a beer. How many bananas go into a loaf of banana bread. I will have to check my mom's recipe, but I believe it is something like 4-5 bananas for a recipe that makes 2 loaves.

Yeah, i definitely will have to try a few things to get it right I'm sure. Luckily I'll be doing it in 1gal batches, so I'll have the freedom to do so without the fear of pouring too much down the drain :)

I had planned on using an english brown recipe. I was just trying to rack my brain to figure out where the extra bread character comes from in this beer. It is definitely a lot more bread flavored than any other one I've ever had.

Try using some wheat malt in it, and steep in a lot of Victory with the Chocolate malt.

im pissed, this beer is always in my local bottle shop but ive ignored it so far, well this thread convinced me to try it and ofcourse now they dont have it.

as someone that hasnt actually tried the the beer in question, but whose interest has been piqued i would maybe start with all maris otter as a base malt use a pinch of biscuit, victory, or pale chocolate for the toastiness and then some toasted oats for that nice cookie/baked goods taste, mash for sweetness.

In all honesty, the beer really isn't all that spectacular. I personally find it pretty tough to drink. I think it's going to be fun to try to brew something like it though.
