It depends on your efficiency, the type of extract, and the wheat extract ratio.
Let's tackle this in 2 parts. First, barley malt only, then the more complicated wheat extract.

For a normal barley extract, assuming you get 75% efficiency, you will get about 36 x.75 = 27
pts per lb from your grain. At 80%, you will get 36 x .80 = 28.8 pts per lb.

For lme, you will add 36 pts per lb
For dme you will add 44 pts per lb

So, just figure out how many pts of gravity from base malt you need to replace, multiply lbs of grain times your efficiency times the max extract of the grain (36 usually is a reasonable guess), and then divide that by your extract type pts per lb.

(base malt lbs x 36 x eff) / extractPts = lbs of extract needed to replace the grain

Now, Wheat malt extract is usually a 60/40 or 50/50 mix. So we need to take away some base malt since there is both wheat and barley in there:

Let's say you have a 60/40 extract ratio like Briess. That means for every lb of extract, you will get .6 lbs of wheat and .4 lbs of barley malt extract.
(Let's call those numbers the wheat ratio and barley ratio.)

We then calculate the new grain bill in 2 parts:
(wheat malt lbs x 36 x eff) / (extractPts * wheat ratio) = lbs of wheat malt extract to add

(lbs wheat extract * extract gravity pts * barley ratio ) / (36 * eff) = lbs of base malt to remove.

ok after doing some math, and granted the size of the batch(5 gal for now), i think im going to opt out for the wheat extract. I do have white wheat or toasted wheat that i can replace with.
Im leaning towards the toasted wheat as I have about 25 lbs of it to use up. Im thinking that because i want a little more of toastiness to it. THoughts? I wanted to brew it today but couldnt get my start going in time this weekend. Hoping sometime this week after work.

Remember, toasted wheat != wheat malt. Different animal altogether.

Post your whole recipe, typical efficiency, and the typical brand of your wheat malt extract that you get from your LHBS, so that one of the BN Army Corp of Engineers members can convert it for you and the rest of the short bussers. (no offense here - just want to help)

my efficiency is usually around 70%, although i havnt checked it in a long time. The recipe is still the same as in the first post, just the wheat subs are changing.
The wheat malt extract is what i got from b3 last spring, so i dont have much info on it, just says 7 lbs of wheat malt extract and a item number. maybe JP can look up some info and numbers on it.
this recipe has never been brewed so i have no idea what its like with either malts too. I may try and do two separate 2 or 3 gal batches with the different malts sometime after the first trial to see if theres a difference

Says that the DME is from Briess, so that would be 60/40 -- if it's LME, that stuff is 34 pts per lb. Their DME is 43 pts per lb.


(.5 lbs wheat malt * 36 * .70) / (34 * .60) = 0.62 lbs of wheat LME
(.5 lbs wheat malt * 36 * .70) / (43 * .60) = 0.49 lbs of wheat DME

(.62 * .40 * 34) / (36 * .70) = 0.33 lbs of base malt to remove if you are adding LME
(.62 * .40 * 43) / (36 * .70) = 0.43 lbs of base malt if you are adding DME

thanks bdawg, thats a lot of math for me this early, or anytime :wink:
They must have changed packaging since i ordered though cuz mines in a 1 gal plastic just, like the commercial mayo jugs, just filled half way.
I woke up this morning to two beautiful starters ripping away, so if all goes well, i might try to get it done tonight or tomorrow.
Bdawg, you be a lifesaver- might have to send ya a couple bottles when its done, assuming it tastes good

brewed it up tonight. pretty rough brewnight. it rained pretty good so a makeshift leanto from my shed to my truck via tarp was in order, but water plus dirt=mud. not that fun. shoulda sparged more, came up a little short. But oh well, we'll see how it turns out. I need to just wait for a whole day off and try not to rush it, to easy to mess things up. I toasted a lb of pecans and half lb of almonds and threw in. Kinda interested to see what they impart into it.
