Tasty APA question

I just brewed a 12 gallon batch of Tasty's APA, and hit all my numbers, mashed at 154 as directed.

I used US-05, and it finished at 1.014 from an OG of 1.060.

Is that low enough for this beer Tasty? I'm used to my Pale Ales finishing at 1.010.

Seems a bit high. I used Pacman yeast and it finished at 1.008. You sure it is done? More importantly, how does it taste?

I tasted the Hydro sample, and it tasted sweet. I'd really like it a bit dryer, but I've roused the yeast, and warmed it up to 70.. no dice after 10 days.

1.014 is a little high but not much. 1.012 would be about as low as I would want it to go. I'm assuming you mashed at the 154F I give in the recipe. I specify a 154F mash because the beer is usually very fermentable. My theory is that it's the combination of two-row and Pilsner base malts.

1.014 doesn't immediately say to me that this beer is under attenuated. Given the higher mash temperature, you're not that far off. On the other hand if it tastes sweet, that's of concern. Once it's carbonated it's going to seem hoppier. This could be one of those beers you have to drink young while the hops are at their peak. BTW, don't be afraid raise the ferment temperature up to 74F or so.

Everybody's system and process is a little different. I'd lower your mash temperature to 153F next time. If you haven't calibrated your thermometer lately, it wouldn't be a bad idea.

I followed your directions to the tee. I have it split into 2, 6 gallon batches, so I may dry hop and keg one now, and leave the other one at 72-74 for another week.

My APA (Tasty inspired of course..yup, yup, yip, yep). Hits 1.012 usually. I have fermented it with WLP007 and it is usually a little higher on terminal gravity by my highly calibrated eye, but my notes are at home. I agree with T McD and would say maybe try to rebrew and drop your mash temp target a degree or two....I've found on my system/process I need to mash a little lower than some recipes spec.

In any case I bet you'll drink it up fast once carbonated. I love every version of this APA I put out.

Well, once again RDWAHAHB.

1 week in the keg, and it is really starting to get "tasty". Had about 3 pints of it last night while watching my Canucks get blown out. Hop flavors are starting to come together, and surpass the bitterness. There is a nice biterness at the very end... really delicious. No complaints about finishing at 1.014, the body/mouthfeel is perfect. Gives the impression of a bit bigger beer then it actually is. Having a BBQ this Saturday, so we'll see how it goes.

Only thing I'm going to do with the second 6 gallons I have, is dry hop a little longer. If anything I'm missing some aroma.

I don't think it's mash temp . More like starting gravity . I believe ( could be wrong ) but OG should be 1.054. That would account for higher final gravity as well.
