The Plan...A house IPA

Sun Mar 27, 2011 6:10 pm

I have brewed 6 different IPAs this past year but I want to really start honing in on a house IPA.

Anyone have an awesome really drinkable IPA recipe they want to share?

I am looking for something around 6%abv so I can drink a few pints of it, 60ish IBUs with a good citrus hop aroma that finishes dry.

I am planning on doing 2 brews a month and one will be the IPA recipe. I will do slight tweaks every month till I get my perfect IPA. Let me know any ideas.
Pouring - Infidel Porter, Pallino Wit
Fermenting - Till a rustic Saison
On Deck - Abbey Dubbel, Belgian Golden Strong maybe with brett

I brewed the Green Flash Clone Recipe from Can You Brew it show. That turned out awesome! I brewed one yesterday, Nathan Smith's North Oakland IPA, recipe in Zymuygy. I can't wait to see how that one turns out.

Himalayan IPA:

OG:1.066
FG:1.011
5gal

11.5# Rahr Pale Ale Malt or 6.4# Light Dry Malt Extract
.5# Crystal 40L

If all grain, mash at 150F (or whatever your system would require to finish at the target gravity).

Hops: (all pellets)
60min: .75oz Magnum 14% AA
15min: .5oz Simcoe
.5oz Amarillo
.5oz Columbus
0min: .75oz Simcoe
.75oz Amarillo
.75oz Columbus

Dry hop: .75oz Simcoe
.75oz Columbus
.75oz Amarillo

Ferment with WY1728 Scottish Ale, Wy1056 California Ale, WLP001 California Ale, or US05 dry yeast. Make a 2-2.5L starter if using liquid yeast.

I like it with Scottish Ale the best.

Cool, I like the looks of those recipes..I did the West Coast IPA clone as well and it was awesome, but a bit bigger than I want for a house IPA. I think that 6%abv range is really great for an everyday drinker, at least for me.

I also was just looking at the Stone IPA clone recipe from BYO magazine. Anyone ever brewed that one?

I brewed a Three Floyds Alpha King clone recently and scaled it down a bit. It was fantastic. I think you'd be good with any IPA recipe and scaling down the malt bill to whatever you'd like (and the bittering hops accordingly).
Me: I'm gonna drink a Boon Geuze.
SWMBO: You're a booze goon.

My house pale ale is pretty close to Chris Kennedy's, except I tend to use centennial instead of columbus and I bitter with warrior. I admit though, that it's not really a "house" pale ale yet; I've brewed it five or six times, and its been different each time in the hop schedule. I played with continuous hopping, 30 minute additions, first-wort hopping, and so on.

I like a very hoppy but sessionable IPA/pale ale. I made a recipe that I keep on tap all the time. It is lower alcohol but very citrusy and floral like a big IPA, (i am a hopshead). My recipe uses a lot of hops with a combination of Willamette hops (floral and fresh) and a lot of Cascade hops (citrus-grapefruit). The healthy addition of a lot of Wyeast 1318, london ale III, provides a different and interesting flavor ( the yeast isn't very fruity, but different and not as dry as Cal Ale). Recipe below:
