IPA Hops

I have 2 oz each of Amarillo, Centennial, and Cascade; brewing a 1.062 IPA w/12# 2-Row, .75# Munich, .5# Wheat. What would the best hop be for bittering? (I'm also planning on Hop Mashing, too).
On Draft:
Honey Blonde (Saison/Kolsch), Cherrywood Smoked Porter
In Fermenter:
Rogue Shakespeare Stout clone
On Deck:
Dry Stout w/Brett, Belgian Blonde, RIS

well your centennial has the highest a,a% so thats your best bet for bittering. that way you can use less for bittering and more for flaver an aroma IMO

Definitely use the highest AA % for bittering and hop burst with the rest...

Throw some in as a First Wort Hop too for tons of flavor.

I would personally bitter with about an ounce of centennial, then add the remainder of the hops in whatever increments you like in the last 20mins of the boil. but don't forget to spare some for dry hopping

What is the %AA spread on your hops? I agree above, and like to bitter w/ centennial. Blending out the Amarillo/Cascade mid - late - dry will give you a nice solid hop bill.

I'd pass on the hop mashing and rock first wort hopping if you want to try something a little crazy... replace you're flavor additions (30-15 min from end of boil additions) as the first wort. See what happens.

No Crystal malt at all? I'd add about a half pound.

I think that you're OK without crystal malt. The biscuity from the munich will contribute enough malt character that crystal isn't imperative.

I'm with the crowd. Forget the mash hop. Bitter or FWH with Cent for 45-55 ibus, then late kettle everything else. Leave at least an ounce or 1.5 for dry hopping.

If you wanted to be really creative, you could bitter with Centennial, then create a blend of everything left over, and flavor, aroma and dry hop with the blend.
