You put rauchmalt in THAT?!

I've had a few batches come out good so it's time to brew something a little more experimental. I want to sub in some rauchmalt in a style other than porter or stout. The more unexpected the style the better, but sadly no lagers for me yet.

So has anybody brewed or tasted any successful rauchmalt experiments?

Right now i'm thinking smoked saison or dark saison, strong golden ale, or (a little less weird) a smoked dubbel. I like the idea of something yellow/straw/golden having some rockin smoke flavor. Schlenkerla's Helles set me off on this path, because it gets a hint of smoke from their filters, but it doesn't have any rauchmalt in it.

And yeah before anybody asks I have had classic rauchbier and i love it. wasn't it the jamil show on rauchbier where john plise kept asking if anybody actually likes this stuff?

ive done a smoke maibock, helles, and hefe. All of them turned out great. thats why they are all gone :cry:

believe it or not, the shiner smokehaus helles is great. it is smoked with mesquite. another thing that can be done is using other woods or smoking your own malt. the ray daniels book about smoked beer helped me out a lot and is quite in depth about breweries who smoke beer, smoking your own malt, and several recipes involving smoke.

I've never thought about smoking my own since all I've got is a regular Weber grill. My brother (also in naperville... :jnj ...) has a good smoker and a nice big patio so maybe i could rope him into a malt-smoking day...

I made a smoked bitter!

Used the Ordinary Bitter recipe from Jamil's book but substituted one pound of Marris Otter for 1 pound of rauchmalt (beachwood smoked I think).

Came out really nice!

i think that would be rad but i'm not ready to mess with bugs yet :( . ordinary or extra bitter i think would be tasty too but i'm leaning golden strong. i want a lot of smoke in there, like 20-30%, and i don't think a lower-gravity beer would handle it very well.

i've got a saison to do but then this will definitely be the next batch so i'll post a recipe and the results here. whatever recipe i start with will be from BCS, of course, then i will fuck it up.

on an old episode of the session, drew beechum did a smoked mild with 50% alderwood smoke. that sounds delicious

Yeah, I was gonna make Drew's smoked mild with Cherrywood smoked malt, but the only guy I know about who makes it has stopped. I think he said he still has alderwood.
