My double bubble belgian

Thu Feb 28, 2008 7:09 pm

I tapped my DB last ight, but the carb was too low so i amped it up for a couple days. The pint i did draw tastes fine, i think. I was hoping for a bit sweeter, but its got a llittle twang tartness near the end. Is this normal. The last dubble i had was a long time ago and dont remember it.
Its not bad, but not really what I was expecting. It doesnt tasted bad/infected.
thoughts or ideas?
heres the recipe

Have you used the Special B before? My experience has been that it can lend a tangy caramel flavor to the beer. I used to use it in a recipe and after a few revisions to the recipe I found that the beer is better without it. BTW, what is "normal" for a Belgian :D

perhaps next time I may omit the Special B, I was hoping for a little more of a sweet/malty style I guess.
