Lambic Odors

Wed Aug 01, 2007 8:52 am

I'm fermenting a lambic right now and everytime i open my beer fridge my wife gags. It doesn't smell pleasent but it doesn't bother me that much, i actually thought my porter smelled worse fermenting and it's delicious.

How long do you think it will be emitting detectable odors? I'd planned on taking it out of the beer fridge and just letting it chill at ambient temperatures because i didn't want it taking up the space for a year.

Also what should it smell like? And how long am i likely to see airlock activities. I had it at 68 or 70,

Never done a lambic, but my guess is that odor will last quite awhile.
Why would you have a lambic in a fridge?, should be ok in the basement at ambient. If I recall Jamil puts his in the guest shower.

i did it in the fridge because it's my fermenting area, and ambient right now is somewhere in the 80's probably. If i took it out of the fridge it would stink up the whole apartment.

What i'm really wondering is after the initial rush of fermentation passes will it slow enough that it won't really push out enough gas to be noticable outside of the fermentor.
