A California common can come in nice crisp and clean. If you can ferment as cold as 60-62 F (16ish C) that could work for ya. I just use the t-shirt over the carboy in a tub o water method. Gets me 5-7 degrees F below ambient.

havent ever tried the cal common style, Melb is such a long way from California, might be worth a try though
