Re: JZ's Schwarzbier FG=?

I did it once straight out of the book and it came out great, but it had a high FG of 1.020 or thereabouts. It still took 1st in dark lagers in a local competition. I was not using O2 at the time, and I think that could have been a big part of why my FG came out high. You should do whatever you need to do to dial in the FG, lower the mash temp or use a slightly bigger yeast pitch or aerate more.

Yes, ramped to 58F-60F for 24 hours.

I would guess low oxygen, since I just shake the carboy...!
SO, maybe shake it harder, or buy an O2 kit...

Strange, I had a similar problem. I just kegged this beer and ended up at 1.018. It was stuck at 1.020 for a week so I decided to move onto my diacytal rest and it dropped to 1.018. Figured I might as well just keg it and lager. I fermented at 52F and used the yeast cake from a Germin Pils I just brewed.
