Not sure if anyone's still following this thread, but...
I just kegged and force carbed this last night.
This recipe really nailed what I was looking for. Tons and tons of hop aroma and flavor. I don't know how to describe it, but, for lack of a better description, the hop resins really seem to come through. Also a good amount of mellow bitterness.
For this recipe, I copied the grain bill from a Dogfish Head 60 clone. A lot of that flavor comes through. The amber malt I used was Thomas Fawcett amber. I think that malt is really key to a DFH type of flavor. It's got a really great roastiness to it.
This beer tastes kind of like a combination between DFH 60 and 90. It's definitely got more hop flavor and aroma than 60, maybe more than 90. It doesn't quite have the malt backbone that 90 has.
Anyway... this is definitely a favorite of mine. Thanks for the help coming up with this recipe. I highly recommend brewing this if you've got an extra 7 ounces of Amarillo lying around.
