My last batch of American Pale Ale had 1 oz Simcoe as the bittering hop and Crystal for aroma and dry hopping. I was making a hoppy APA and not a full IPA. To me the combination of Simcoe and Crystal was fantastic. I liked it enough that I am going to tweak the grain bill a bit and rebrew it for competition. We'll see what the judges think.
