WLP001 vs WLP007

I have brewed lately with these two yeasts. The beer seems to taste the same. No complaints with the yeast. I just think they are similar.

Take one batch of wort, split it and pitch WLP001 in one batch and WLP007 in the other. Ferment under the same conditions and when done taste the two beers side by side. You should be able to easily tell the difference between the two in side by side tests.

I have just racked my latest brew into kegs. The FG was 1.008. I didn't want
to go this low. What can I do to get a higher gravity with this workhorse yeast? ( WLP007) I mashed @154F. Should I go higher?

I agree with the Pope. I'd split the batches. I mean, doesn't everybody have multiple climate-controlled conicals for experiments? :wink:

If your concern is temperature, I mash my Scottish 60 at 160F and attenuate from 1.040 to 1.015
