Church of Chico Strain!

My brothers and sisters,

I have brewed many a pale, ipa, american brown, and some other shit with wlp001 and safale 1056. I want to know what you guys use for your pales, IPA's, etc.

I stood there looking at yeasts today for 30 minutes. I had East Coast in my hand, Cal ale yeast, Cal V, Pacific ale, some blend bullshit, and on and on. Tell me your yeast and why you like it better than the classic chico strain, PLEASE! Does wearing pants make a difference?

Despite what Dr. Scott and Plise say, I like WLP810 San Francisco Lager for many of those styles. I find it leaves a more balanced (between malt and hops) beer that suits my tastes just fine.

Of course, they are west-coasters, so they are expected to prefer over-the-top hop bombs, so don't hold it against em. :)

I like the 1272 Am Ale II.
That and English ale work best for me. I like the London Ale too. It flocks out pretty good for me.

I am torn between 1272 and the Pacman yeasts as my favorite.

If you like your beers clean and dry (even when fermented in the low 70's), go for Pacman. I do 10 gal batches, split between Pacman and some other American/neutral strain. I almost always prefer the pacman.

Pacman is one of my favorite strains... I've only brewed a few batches with the Pacman yeast, but they've turned out excellent. I'm a huge Rogue fan so maybe I'm biased...
