No Simcoe, suggestions for replacement in IIPA?

Tue Jan 24, 2012 5:09 pm

I want to brew Hop Hammer from Brewing Classic Styles (BCS). I brewed this beer last year to great success and it took best of show in a local comp. I want to brew it again, but I have no Simcoe and apparently no-one else does either. So, I'm looking for replacement hop suggestions. The recipe's hopping schedule is:

90 min Warrior, Chinook
45 min Simcoe
30 min Columbus
0 min Simcoe
Dry Columbus, Centennial, Simcoe

One thought I had was to replace the Simcoe with Falconer's Flight. Not real excited about using a pre-made blend, but it might be interesting...Thoughts?

Yeah I've been to both MN Northern Brewer stores within the last week and they had plenty in stock. I'm assuming their warehouse does too. Better stock up if you can :jnj
