Are there ways to keep the plants "contained" and "small"?(I see them being 20+ feet tall)
When should we plant?

Pretty much any hops you wanted should do well where you live. Cascade is probably the most widely grown by homebrewers.

If you are talking about containing the roots and rhizomes (hops tend to spread horizontally over time), you could try planting them in submerged large pots. Hops naturally grow tall, so you'd want some sort of trellis for them to climb. I suppose you could try training them to grow laterally, but best if you can provide them a way to grow how they want.

Planting would be in spring, if you keep an eye out, rhizomes go up for sale early in the year.

My vote's for Cascade & Centennial. Perhaps my 3rd choice would be something a little more neutral or English. I think Fuggles would do well.

Just remember with the submerged pots that the roots going down from the rhizome like to dig deep (6-7'), so plan accordingly. I've never tried this method, but I would imagine if you had a large enough pot to accommodate the crown, you could likely cut a hole in the bottom allowing the roots to dig down but prohibiting the crown from spreading out horizontally.
